OOOOOOOOOOOOO!!!!!!!!!!!!!!!!!!! Thank you thank you thank you! My dad was a chef in the navy and he brought home recipes for 'Beef Wellington' also 'Poor Man's Wellington', which uses minced beef instead. They were delicious. Thank you for the reminder. I shall certainly have a go now I have a clear recipe. Wow. This is yummy!

I had to post Helena's comment, first to say the beef Wellington cortobeille was delicious, and than it was so nice to have a comment from the daughter of a good English chef...We are very proud, thank you dear and we'll try the" Poor Man's Wellington"...

I think you have to mix very finely chopped onion into the mince.... in fact I think he used shallots....
